Despite its smaller size and rings to navigate around, Saturn's composition is much more valuable as an energy source than Jupiter. After a few years of mining its much larger brother, SpaceCorp launched a research expedition which resulted in the discovery of 'Element X'. This new element in conjunction with atomic science resulted in a type of xenon fuel becoming the gold standard for starship fuel. Say what you will about SpaceCorp, those buggers are pretty clever every now and then.
