Quinn is the quidditch coach, and the only coach, so I don't think house teams would be a good idea. Instead I think I'd like to make it more of a travel team where we'd play other Wizardry schools all around the world. That way all the quidditch players can mingle with each other without worrying about house rivalries.
That is, if this is ok with Stark.

They only have one quidditch coach at Hogwarts, each house's team instead has a captain that acts as a coach.
Why don't you still have house teams, but then also a single school team which takes the best players from around the school? That way you still get the competition between each house, but the players on the school team would come together to play when against other schools.
