By a Jackle being immortal, it just means that they live forever, as in never age. But they aren't unpredictable. They can be killed just like any human could. The only thing is, because of the Jackle's abilities and powers, it is a lot harder to be able to stab them or shoot them.

Oh yeah, sorry I meant to say something about that but completely forgot. :P The reason only Castiel and Seth are the only ones who can do this is because they have to have something that sets them apart from other Jackles and makes them leader material.
