So I remember looking through the realistic PokeDex entry regarding Viridian City and noticing there being a change of Gym Leaders from the original games/series (I hadn't actually noticed this before since I haven't really played many of the Pokemon games). Evidently, the original gym leader was Giovanni, who is the leader for Team Rocket, until he was outed for his position in the criminal organization. At that point, Blue took over as Gym Leader. At the same time, you've also said that none of the games/anime series events are canon.

So who runs that gym? Blue? Giovanni? Or some other individual?

For the sake of simplicity, we're going to say that it's a new Gym Leader.

Giovanni will run Team Rocket as previous, but not double as a Gym Leader. No Red, no Blue. They don't exist.

The new Gym Leader will be a guy named Vilkas Farland. He's a tall man, about 6' 2", weighing about 200 pounds of sheer muscle. He's a nice enough guy, but deadly serious about Pokemon Battles. No nonsense kind of Trainer.

He will prefer a combination Dark, Ground, and Fighting type Pokemon. His main Pokemon for his ultimate team is Mega Absol, and a staple in all of his lower tier teams (kind of his personal mascot) is a regular Absol. His other Pokemon are a healthy mixture of the other types including rock/ground types like Ryhorn, Golem, Lucario, etc,.

They always carry teams of six, but you can request a specific match up like 1v1, 2v2, 3v3, etc,.

It's a common enough occupation.

It's kind of the equivalent of an engineer or tech specialist of some kind. It's popular and wide-spread. But there's no given percentage of just how many people in the world do it. It's just kind of understood to be incredibly popular as an occupation because the work is technically endless.

You only stop being a Trainer when and if you want to.
